Mediterranean Chicken Salad
  1. In a saute pan, add the olive oil over medium heat. Once hot, add the seasoned chicken breasts and sear on each side for 6-7 minutes, until golden brown and cooked through.
  2. Remove from heat and let cool. Once cool, shred or slice the chicken for serving. Set aside.
  3. Divide the romaine lettuce between the plates. Top the romaine with the green peppers, grape tomatoes, English cucumbers, roasted red peppers, green olives, red onion, feta cheese, dried oregano, and shredded chicken. Drizzle red wine vinaigrette, and enjoy!

  1. In a bowl, whisk together the red wine vinegar, olive oil, dijon mustard, garlic, shallot, oregano salt and pepper.
