Ingredients
Mediterranean Chicken Salad
- 2 chicken breasts trimmed, seasoned with salt and pepper
- 2 tablespoons olive oil
- 2 heads romaine lettuce coarsely chopped
- 1 green pepper diced
- 3/4 cup grape tomatoes halved
- 1/2 English cucumber sliced
- 1/2 cup roasted red peppers chopped
- 1/4 cup green olives chopped
- 1/4 cup red onion diced
- 1/4 cup feta cheese crumbled
- 1 teaspoon dried oregano
Red Wine Vinaigrette
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
- 1 tablespoon dijon mustard
- 1 clove garlic minced
- 1 tablespoon shallot minced
- 1 teaspoon dried oregano
- salt and pepper to taste

Instructions
Mediterranean Chicken Salad
- In a saute pan, add the olive oil over medium heat. Once hot, add the seasoned chicken breasts and sear on each side for 6-7 minutes, until golden brown and cooked through.
- Remove from heat and let cool. Once cool, shred or slice the chicken for serving. Set aside.
- Divide the romaine lettuce between the plates. Top the romaine with the green peppers, grape tomatoes, English cucumbers, roasted red peppers, green olives, red onion, feta cheese, dried oregano, and shredded chicken. Drizzle red wine vinaigrette, and enjoy!
Red Wine Vinaigrette
- In a bowl, whisk together the red wine vinegar, olive oil, dijon mustard, garlic, shallot, oregano salt and pepper.
