  1. Using a candy thermometer, heat the oil to 375 degrees in a heavy-bottomed dutch oven.
  2. Place the sweet potato fries in a large ziploc bag. Add the corn starch and water to the zip lock bag, and shake until coated.
  3. Once to oil has reached 375 degrees, add the fries in batches to the oil and cook for 5 minutes.
  4. Remove the fries from the oil, and place on a cooling rack with paper towels lined below. Immediately season generously with old bay. Let cool for several minutes.
  5. In a bowl, whisk together the ketchup and mayonnaise. Serve with your favorite dish!
