My sous chef and I are moving this weekend and we’ve championed one motto for dinners this week: easy peasy. Or ‘simple dimple’ if you ask my sous chef (don’t tell him, but I don’t think that’s an actual expression!). Folks, it doesn’t get any simpler than this. A grill is a beautiful opportunity to put the dishes down, turn the flavor up and enjoy. This takes so few ingredients and so little time, there is no reason not to add these gorgeous kebabs to your weeknight dinner rotation.
Marinated Steak Kebabs with Garden Vegetables:
- 2 lbs. sirloin steak
- Marinade (we used A1 chipotle BBQ marinade)
- Assorted vegetables: grape tomatoes, red onion, zucchini & red pepper
- Olive oil, for coating
- Salt and pepper
- Skewers
The night before, cube your sirloin steaks and place in a large ziploc bag. Create your marinade – I have to say, the one we used was amazing – and add to your bag.
Let marinate overnight. When ready to construct the kebabs, preheat your grill to 400 degrees. Then, begin by slicing the zucchini, red pepper and red onion. I prefer chunky kebabs – so I slice my vegetables accordingly. Toss with olive oil, salt and pepper (don’t forget to add the whole grape tomatoes!).
Then, begin skewering.
Alternate vegetables and meat to your liking until the goods have been used up.
Once the grill is hot, add the kebabs. Let cook for 5 minutes and flip. Let cook for an additional 5 minutes and remove from heat.
These kebabs are delicious, so enjoy. Our devotion to wine has apparently waned (just kidding!), but we did enjoy delicious beer with this gorgeous dinner. So, grab your go to beer, and dig in!
