I’ve pretty much been in full-blown summer recipe mode since March or so – come August I’ll probably be posting pumpkin-this and pumpkin-that. Eh, sometimes you just have to live on the wild side, right? (Yes, that is the extent of adventure in my life, wild and crazy I tell ya.) But anyway, my sous chef suggested we make simple, classic barbeque chicken and it sounded pretty darn delicious. So we went for it. And in the spirit of ease, we opted to use store-bought barbeque sauce – but of course, if you’re feeling like Wolfgang Puck, go forth and make your own! We actually bought everything to make our own and when it came down to crunch time, we crumbled in the face of bottled barbeque sauce glaring at us from the pantry. Okay, okay, I keep saying “we” but it was really me who was being lazy. Nevertheless, the chicken was gorgeous and delicious so worth sharing with you anyway!
Barbeque Chicken Thighs and Drumsticks:
(Serving size: ~5)
- 5 chicken drumsticks
- 5 boneless, skinless chicken thighs, trimmed
- 3 tablespoons brown sugar
- 2 tablespoons smoked paprika
- 1 tablespoon pepper
- 2 teaspoons salt
- 2 teaspoons cayenne pepper (or more for heat)
- 1 cup of your favorite barbeque sauce
First things first: preheat your grill to about 350-400 degrees. Next, trim your chicken thighs. Then, in a bowl add your brown sugar, smoked paprika, pepper, salt and cayenne.
Whisk to combine.
Then, generously cover the chicken thighs and drumsticks with the rub.
Once the grill is preheated, add the drumsticks. The total cooking time of these bad boys should be about 30-35 minutes, or when the internal temperature has reached 165 degrees. During those 30 minutes-35 minutes, rotate the drumsticks basting them with barbeque sauce every 7 or so minutes. After the first 15-20 minutes has passed, add the chicken thighs (they cook much faster) allowing them to cook for about 15 minutes, or 7-8 minutes on each side. Now, don’t forget to baste these babies, too. After they are fully cooked, remove.
Now, these puppies are spicy. Grab a cold beer and enjoy!
