Corn is finally in season. I’m pretty sure that I spent the majority of winter on Pinterest patiently waiting to make every savory and delicious corn recipe the moment fresh corn appeared in grocery stores. And that moment when I finally saw fresh ears of corn? You would think I had won the lottery. But the very first corn recipe we made pretty much was gold, so it was kind of like winning the lottery.. right (i.e. Smoky Corn Chowder with Sweet Potatoes, Shrimp and Applewood Smoked Bacon)? And friends, this isn’t far off. The brightness from the lime zest, the earthiness of cilantro and sweetness of the butter: dee-lish. And, the best part (besides how amazingly delicious this is, of course), how freaking easy this is! Throw these bad boys on the grill for a few minutes, baste here and there, and there you have it: a delicious side dish. Like, really yummy. Okay, okay, I’m just gonna cut to the chase. Let’s fire up our grills, because we’re cooking up some delicious corn.
Grilled Corn with Cilantro-Lime Butter:
(Serving size: 3-4)
- 4 ears of corn, husked
- 4 tablespoons of butter
- 1/4 cup chopped cilantro
- Zest of 1 lime
- Juice of 1/2 of a lime
- 1/2 teaspoon salt
- 1 teaspoon pepper
Alright – let’s begin by firing up the grill to about 400 degrees. Then, shuck your ears of corn.
Next, chop your cilantro and zest your lime.
Next, heat the butter in the microwave for about 1 minute or until melted.
Add the lime zest, lime juice, cilantro, salt and pepper to the melted butter.
Mix that bad boy until completely combined.
Once the grill has preheated, add your corn and baste with the butter. Close the grill, let cook for about 90 seconds. Rotate 90 degrees, baste and repeat until the four sides of the corn are perfectly charred.
