A few days ago my sous chef and I made amazingly delicious spicy honey chicken thighs and we were eager to get dinner finished all in one swoop (essentially all grilled – coincidentally without any dishes to clean!). Now, I clearly have an admiration for sweet potatoes – but I have to admit, I am not a huge fan of sweet potatoes when they’re prepared with loads of sugar and the like. I much prefer a savory style – and grilling these babies up? They were amazing. The heat from the cayenne, the earthiness of the thyme, a touch of salt and there you have it: perfection. So so good. And I just love the char from the grill.
Grilled Sweet Potatoes with Fresh Thyme and Cayenne:
- 2 sweet potatoes
- Olive oil for drizzling
- 1 tablespoon fresh thyme
- 1/4 teaspoon cayenne
- Salt and pepper to taste
Start by preheating your grill to about 400 degrees. Then, slice your sweet potatoes about a 1/2 inch thick.
Drizzle with your olive oil and sprinkle the cayenne and thyme atop the potatoes. Then, season with salt and pepper.
Once the grill has preheated, let cook for about 10 to 12 minutes per side – or until perfectly tender and delicious.
Then, remove from heat and voila! Gorgeousness.
A perfect side for any summer night.
