I have a not-so-secret obsession with chicken thighs. I mean, why use chicken breasts when these moist, tender little nuggets exist? And friends, this recipe is amazing (and courtesy of The Girl Who Ate Everything). I found myself tantalized by the recipe on Pinterest – and after grilling these beauties, I was even more awestruck by the gorgeous, fiery charred thighs. They are really, really stunning. And while I could oogle the thighs all day, I was ready to devour these babies. And wow. So delicious. Not to mention the weather was beautiful and grilling these spicy beauties just made sense. Alright, let’s get started.
Spicy Honey Chicken Thighs:
- 6 boneless skinless chicken thighs
- 2 chicken drumsticks
- 2 teaspoons garlic powder
- 3 teaspoons chili powder
- 1 teaspoon onion powder
- 1 teaspoon coriander
- 2 teaspoons salt
- 2 teaspoons cumin
- 2 teaspoons chipotle chili powder
- 2 teaspoons pepper
- 1/2 cup honey
- 1 tablespoon cider vinegar
Let’s begin by preheating our grills (to about 400 degrees). Then, trim the chicken thighs removing the larger pieces of fat. Next, in a bowl, combine the garlic powder, chili powder, onion powder, coriander, salt, cumin, chipotle chili powder and pepper.
Next, mix it all up. Then generously rub the thighs and drumsticks with the spice mixture. Really get in all of the nooks and crannies.
Then, in a microwave proof bowl add your honey and apple cider vinegar. This is going to be the baste. In order to make this mixture a bit easier to baste with, we’re going to microwave it for 30 seconds. Mix once again. Once the grill is preheated, add the chicken for 5-6 minutes on each side. We basted probably three times on each side (baste being brushing the chicken with a basting brush). Then remove the chicken from the grill and prepare to be amazed.
Plate these puppies up and enjoy!
On such a gorgeous day, we grabbed a couple of cold ones and gobbled these beauties right up.
