We may have eaten our weight in creamy, cheesy onion dip (#noregrets, #yolo). It’s not like beach season is around the corner my friends, so you have full permission to be a glutton here. Come on, cold weather + Sunday football calls for some seriously cozy game day food. So, uh, yes – I’ll take a bowl (or three) of this rich, savory dip with a side of crusty bread.
And let’s all agree to indulge in the best winter comfort foods and save the diets for our New Year’s resolutions. K? Great. And I should clarify – by “diet”, I actually mean like, my diet will only include macaroni and cheese, pizza, and maybe this onion dip beginning January 1. We can do our diet together, k? We’ll be each other’s support. When I start to feel like maybe I need something green, you can encourage me to take that leap of faith and have a slice of pizza instead. I feel like we’re going to be best friends. This is definitely the start of something special. But before then, I’m sharing this super special onion dip recipe with you (because who doesn’t love onion dip), so you can whip up a batch and stash this recipe away for our diets.

- 3 large sweet onions thinly sliced
- 1 tablespoon extra virgin olive oil
- 1 tablespoon butter
- 3 cloves garlic minced
- 1 1/2 cups sour cream
- 1/2 cup mayonnaise
- 1/2 cup Parmesan cheese grated
- 1/2 cup Mozzarella cheese grated
- 2 teaspoons salt
- 1 teaspoon pepper
- crusty bread and/or potato chips for dipping

- Preheat your oven to 400 degrees.
- In a large saute pan, heat the butter and olive oil over medium heat. Once hot, add your sliced onion. Saute the onion over low-medium heat for 45-50 minutes, or until the onions have caramelized and turn a golden amber color.
- Remove from heat. In a large bowl, mix together the garlic, sour cream, mayonnaise, Parmesan cheese, Mozzarella cheese, salt and pepper. Add the caramelized onions, and mix until combined. Transfer to a casserole dish (we used a 1.5 liter Corningware dish and was a perfect fit).
- Bake at 400 degress for 30-35 minutes, or until bubbly and golden-brown.
