New Year’s Resolution? Make these fries! Who cares that they’re not baked – that’s why you made the other New Year’s Resolution to go to the gym! Plus, sweet potatoes are harmless. I’ve never met a sweet potato I haven’t liked. And my friends, old bay seasoning on these puppies? Um, genius.
I always used to be afraid of deep frying things – and let’s be clear – it wasn’t because of the calories. Actually, the whole process was a bit intimidating to me. And then enters the sous chef. Who of course is down for deep frying anything. So I enlist his help, and voila – these crunchy, sweet beauties were born.
And the sauce to dip the fries in? It’s the sous chef’s secret sauce. The first time I had his secret sauce, I realized I may not have really been living life before that moment. It’s really that good – and so simple.
And if you’re so inclined, you might just opt to have the secret sauce with a side of sweet potato fries. Would that be crossing the line? You don’t have to answer, really. Be bold. I am the queen of using inappropriate amounts of condiments, sauces, etc. Sometimes you just have to own it.

- 4 large sweet potatoes rinsed, cut into 1/2 thick matchstick shaped fries
- 1 cup corn starch
- 1/2 cup water
- vegetable oil for frying
- candy thermometer
- old bay for seasoning
- 1/4 cup mayonnaise
- 1/4 cup ketchup

- Using a candy thermometer, heat the oil to 375 degrees in a heavy-bottomed dutch oven.
- Place the sweet potato fries in a large ziploc bag. Add the corn starch and water to the zip lock bag, and shake until coated.
- Once to oil has reached 375 degrees, add the fries in batches to the oil and cook for 5 minutes.
- Remove the fries from the oil, and place on a cooling rack with paper towels lined below. Immediately season generously with old bay. Let cool for several minutes.
- In a bowl, whisk together the ketchup and mayonnaise. Serve with your favorite dish!
